Lemon Curd Pudding



One of Jamie Oliver's great recipes!


Ingredients (serves 4)
55 gr butter
115 gr vanilla sugar
1 organic lemon
2 large eggs
55 gr self-raising flour
285 ml milk


Preheat the oven to 200°C. Cream the butter, sugar and lemon rind in a bowl. Add the egg yolks and the flour and beat in. Add the milk and 3 tbsp of lemon juice and mix well. Whisk the egg whites separately until stiff and add the rest of the mixture. Mix well, but don't let the air come out of the whites. Pour into a buttered ovenproof dish, and place it in a bigger tin covered with a third of water. Bake in for about 45 minutes until the top is spongy and a nice golden colour!
